Easy Chicken Recipe - Chicken Malai Kabab

INGREDIENTS:-

1 kg boneless chicken

2-3 green chillies

3 tbsp yogurt

2 tbsp ginger paste

2 tbsp garlic paste

1 tbsp corn flour

1½ tsp black pepper powder

1 ½ tsp white pepper powder

1 tsp chat masala

1 tsp meat tenderizer

½  tsp red chilli powder

½ tsp cardamom powder

½ cup of grated cheese

½ cup of fresh cream

¼ cup coriander leaves

½ cup cooking oil

Salt to taste

Wooden skewers

      

Method:-

·         Sqeeze out water from ginger garlic paste. Keep aside.

·         Make a paste of coriander leaves & green chillies together. Keep aside.

·         Take a tissue,remove extra moisture from the chicken.

·         Cut the chicken into small pieces.

·         In a large mixing bowl add white pepper powder,black pepper powder,red chilli powder,cardamom powder,ginger garlic paste & salt. Mix well.

·         Put the chicken pieces. Mix well. keep aside for 1 hr.

·         In another bowl add cheese,yogurt,cream,chilli n coriander paste,corn flour,oil n little salt. Make a smooth paste. Ensure that no lumps are formed.

·         Pour the chicken pieces into this mixture.

·         Mix well to coat all the chicken pieces.

·         Keep the chicken in refrigerator for 1 hr.

·         Take out the chicken from refrigerator. Add meat tenderizer. Mix well.

·         Keep aside for 20 min.

·         Soak wooden skewers in water for half an hour. Pat dry.

·          Apply butter firmly on the skewers.

·         Place the chicken pieces on skewers. Lightly brush with oil.

·         Bake in the oven at 500 F for 15-20 min.

·         Take out the skewers.Turn to the other side.

·         Put it back in oven for another 10 min.

·         Your chicken malai kabab is ready.

·         Remove chicken pieces from skewers.

·         Arrange chicken malai kabab on plate with lemon slices.

·         Sprinkle chat masala before serving.

Easy Chicken Recipe - Chicken Rice

INGREDIENTS:-
300 gm basmati rice
250 gm boneless chicken (cut into small pieces)
2 onions (chopped)
2 flakes of garlic (minced)
2 green chillies
2 tbsp grated cheese
¼ cup of parsley (finely chopped)
10-12 cahews
8-10 raisins
Salt to taste
2 tbsp vegetable oil

Method :-
· Wash and soak rice in sufficient water for half an hour.
· Cook the rice to 90%. Ensure the grain has not gone very soft.
· Boil the chicken pieces with little salt. Keeep aside.
· Heat little oil in a pan. Saute cashews n raisins for few seconds. Keep aside.
· Heat oil in a deep bottomed pan. Add onions & garlic. Fry for 2-3 min.
· Add chicken pieces. Fry for another 2-3 min.
· Add prepared rice,cashews,raisins and green chilli. Add salt. Mix well.
· Add parsley just before switching off the burner.
· Chicken rice is ready.
· Garnish with grated cheese before serving.

Easy Chicken Recipe - Pineapple Chicken

INGREDIENTS:-

1 kg chicken (cut into small pieces)

8 thin slices of pineapple

3 onions (sliced)

3 tbsp yogurt

2 tbsp ginger paste

2 tbsp garlic paste

1 tsp red chilli powder

1 tsp garam masala powder

1 tsp roasted cumin powder

1 tbsp poppy seeds

10 cashews

10 almonds

6 raisins

Salt to taste

4 tbsp vegetable oil

Method:-

· Soak the almonds in water for about an hour. Remove the skin.
· Make a smooth paste of almonds,raisins and poppy seeds together. Keep aside.
· Heat little oil in a pan. Saute cashews for few seconds. Keep aside.
· Heat oil in a different pan. Fry the onions till golden brown.
· Add garlic paste. Saute for few seconds.
· In a small cereal bowl beat the yogurt,chilli powder,roasted cumin powder and ginger paste.
· Add this mixture to frying pan. Fry for 2-3 min.
· Add the chicken pieces. Cook for 5-6 min.
· Add previously prepared almond paste & pieapples. Saute for another 5-6 min.
· Pour 2 cups of hot water to the chicken.
· Cook the chicken until done in low flame covering with a lid. Stir occasionally.
· Add garam masala powder just before switching off the burner.
· Your pineapple chicken is ready.
· Serve hot garnished with roasted cashews.

Easy Chicken Recipe - Grilled Chicken Breast

INGREDIENTS:-

1 kg chicken breast (boneless)

¾ cup of melted butter

1 cup of onion paste

2 tbsp lemon juice

2 tbsp vegetable oil

½ tsp black pepper powder

1 tbsp milk

½ tsp saffron


Method:-

· Immerse the saffron in warm milk. Keep aside.

· Cut the chicken into small pieces.

· Place the chicken in a large mixing bowl.

· Add onion paste,lemon juice, black pepper powder,and saffron. Mix well to coat all the chicken pieces.

· Cover the bowl with aluminium foil. Refrigerate overnight.

· Take out the chicken 1 hr. prior to cooking.

· Soak wooden skewers in water for half an hour. Pat dry.

· Apply butter firmly on the skewers.

· Place the chicken pieces on skewers. Lightly brush with oil.

· Grill the chicken pieces over medium heat. Cook until golden brown. Turn the skewers frequently while cooking.

· Your grilled chicken is ready.

· Serve these grilled chicken breasts with fresh salad.

Easy Chicken Recipe - Lemon Chicken

INGREDIENTS:-
½ kg boneless chicken (cut into small pieces)
3 lemons
1 egg
2 tbsp ginger paste
2 tbsp garlic paste
2 tbsp onion paste
2 tbsp corn flour
2 tsp black pepper powder
1-2 green chilli
Salt to taste
Vegetable oil for frying

Method:-
· Squeeze the lemons. Remove seeds.
· Mix ginger paste,garlic paste,onion paste,black pepper powder,1tbsp lemon juice and salt in a bowl.
· Pour this mixture over the chicken pieces. Ensure that all the pieces are well coated.
· Marinate the chicken for about 4 hrs.
· Add 1 tbsp cornflour with the chicken. Mix well.
· Heat oil in a pan. Deep fry the chicken pieces until golden brown. Keep aside.
· In a bowl mix the remaining part of the lemon juice with a cup of water.
· Add sugar & salt. Mix well.
· Heat this mixture in a separate pan. Bring to boil over medium heat.
· Add the chicken pieces. Add green chillies.
· Cook for few minutes.
· Dissolve the remaining corn flour in 1/2 cup water.
· Add to the chicken. Stir constantly to avoid lumps. Cook for another 2-3 min.
· Your lemon chicken is ready.
· Serve hot garnished with the slices of lemon.

Easy Chicken Recipe - Cold Chicken Salad

INGREDIENTS:-

250 gm boneless chicken

200 gm potato

100 gm black grapes

25 gm raisins

4 spring onions

4 lettuce leaves

1 apple

½ cup mayonnaise

1 tsp black pepper powder

1 tsp lemon juice

½ tsp butter

Salt to taste


Method:-

· Boil the chicken with little salt and black pepper powder. Cool and shred.

· Boil the potatoes with little water. Peel & cut into small pieces.

· Chop the white portion of spring onions finely.

· Melt butter over medium heat. Add chopped spring onions. Saute for few seconds.

· Peel the apple. Slice thinly.

· Cut the grapes into two pieces. Remove seeds.

· Wash raisins in cold water. Keep aside.

· Place chicken,potatoes,spring onions,apple,grapes & raisins in a bowl.

· Add lemon juice,black pepper powder,salt & Meyonnaise. Toss well.

· Refrigerate until cold enough to eat.

· Arrange lettuce leaves on a plate. Transfer chicken salad on it & Enjoy cold chicken salad.

Easy Chicken Recipe - Oven Baked Barbequed Chicken | BBQ Chicken

INGREDIENTS:-

For the chicken:
1 kg chicken (cut into pieces)
2 tbsp garlic paste
1 tbsp tomato ketchup
1 tsp soya sauce
1 tsp chilli suace
½ tsp red chilli powder
½ tsp black pepper powder
2 tbsp vegetable oil
Salt to taste

For the bbq sauce:-
1 onion (finely chopped)
1 cup of tomato ketchup
½ cup hot water
1/3 cup of lemon juice
1 tbsp oyester sauce
1 tsp sugar
1 tsp red chilli powder
½ tsp butter
½ tsp black pepper powder

Method:-

Prepare the bbq sauce:
· Melt the butter over medium heat in a pan.
· Add the onions. Saute until soft.
· Add all the remaining ingredients.
· Simmer for about 20 min. stir occassionally.
· When the sauce becomes thick,remove from heat.

Prepare the chicken:
· Preheat oven to 400 degree F.
· Mix garlic paste,tomato ketchup,soya sauce,chilli suace,red chilli powder and black pepper powder in a bowl.
· Pour this mixture over the chicken pieces.
· Ensure that the pieces are well coated.
· Take a baking dish. Apply thin layer of oil over the baking surface.
· Arrange the chicken pieces over the baking dish.
· Bake for 30 min.
· Take out the chicken. Keep aside a small part of the barbeque sauce.
· Spread the rests of the sauce evenly over the chicken pieces.
· Reduce the heat of oven to 375 degree F.
· Bake the chicken pieces for another 25-30 min.
· Test the chicken, whether it is properly cooked by slightly inserting a knife into its body.
· When the chicken is done,take out from the oven.
· Place the chicken on a serving plate.
· Garnish with a spoon of the remaining sauce on each of the chicken pieces.
· Serve hot barbequed chicken / bbq chicken with onion rings.

Easy Chicken Recipe - Fried Chicken

INGREDIENTS:-

For the chicken:
10 small chicken pieces (boneless)
2 eggs
½ cup onion paste
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp corn flour
1 tsp green chilli paste
½ tsp lemon juice
½ tsp baking powder
½ tsp garam masala powder
Salt to taste
Vegetable oil for frying

For the Sauce:-
4 tbsp tomato sauce
1 tbsp vinegar
1 tbsp honey
1 tbsp soya sauce
1tsp black pepper powder
½ tsp butter
Salt to taste

Method:-

Prepare the sauce:
· Add all the ingredients in a bowl except the butter. Mix well.
· Heat butter in a pan over medium heat.
· Pour the mixture. Stir for 2-3 min.
· Allow the mixture to cool. Keep aside.

Prepare the chicken:
· In a large mixing bowl beat the eggs with cornflour,baking powder & ½ tsp oil.
· Now add the onion paste,ginger paste,garlic paste,green chilli paste,lemon juice n garam masala to the mixture.
· Mix all the ingredients to form a fine batter.
· Pour this mixture over the chicken pieces. Ensure that the pieces are well coated.
· Heat oil in deep bottomed pan.
· Deep fry the chicken pieces over medium heat. Fry until golden brown.
· Drain on paper towels.
· Serve these fried chicken with the sauce you prepared earlier.

Easy Chicken Recipe - Chicken Biryani

INGREDIENTS:-
1 kg chicken
500 gm Basmati Rice
4 large potatoes (peeled & halved)
2 large onions
200 gm plain yogurt
2 tbsp ginger-garlic paste
1 tbsp whole garam masala
1 tsp garam masala powder
1 tsp red chilli powder
1 tsp shahi jeera
1 tsp kebab chini
1 tsp mace
1 tsp sugar
½ tsp saffron
4-5 whole black pepper corns
Kewra water few drops
Salt to taste
Vegetable oil/ghee

Method:-

Prepare the Chicken n Potatoes:
· Cut the chicken into medium sized pieces. Add vinegar and marinate for half an hour.
· Add, yogurt, ginger-garlic paste,red chilli powder,sugar, garam masala & salt to the chicken. Mix well. Keep aside for 5-6 hours.
· Peel and cut the potatoes into 2 pieces.
· Sprinkle little salt over the potatoes. Fry till golden brown.
· Heat 1 tsp ghee/oil in a large vessel. Add cinnamon, cardamom. Saute for few seconds.
· Add onions. Fry till golden brown.
· Add the chicken pieces. Reduce heat. Cook the chicken slowly.
· When the chicken is half done,add the potatoes and proceed to cook until the chicken is tender. Add little water if required.
· When the chicken is done add little kewra water. Keep aside.

Prepare the Rice:
· Wash the rice and let it dry completely.
· In a muslin cloth, add whole black pepper corns, shah jeera,kebab chini, mace (javitri), cloves, cinnamon, cardamom and tie a knot over them. Keep aside.
· Heat ghee/oil in a pan. Add cinnamon n saute for few seconds.
· Add the rice. Sprinkle little salt and fry for 2-3 min.
· Pour hot water (2cups of rice = 4 cups of water).
· Drop that muslin cloth into the water. Cook the rice covering with a lid.
· Don’t boil the rice completely. It should be half boiled.
· When the rice is done allow it to cool thoroughly.

Garnish:
· Cut 1 onion into long pieces. Deep fry until golden brown.

Final Step:
· Heat ghee/oil in a large bottomed pan over low flame.
· Add one third of the prepared rice and distribute it over the base of the pan.
· Add half of the prepared chicken & the potatoes over the rice, spread properly.
· Add another layer of rice and subsequently the final portion of the chicken.
· Finally cover the chicken with the rest of the rice. Add the fried onion, 1 tsp ghee ,1 pinch of saffron and 1 tsp of kewra water.
· Simmer for 15-20 min.
· Your chicken biryani is ready.

Easy Chicken Recipe - Chicken Drumstick

INGREDIENTS:-

10 pieces of chicken drumstick

2 eggs

2 tsp onion paste

2 tsp ginger garlic paste

1 tsp soya sauce

1 tsp chilli sauce

1 tsp black pepper powder

1 tsp lime juice

1 tsp corn flour

2 tbsp all purpose flour

Salt to taste

Vegetable oil for frying


Method:-

· Take a knife. Make two diagonal cut in each chicken drumstick.

· Mix onion paste,ginger-garlic paste,soya sauce,chilli sauce,black pepper powder,lime juice and salt in a bowl.

· Pour the mixture over the chicken drumstics. Mix well to coat all the pieces.

· Keep these chicken drumstics in refrigerator for about 2-3 hrs.

· Take a bowl & beat the eggs. Add corn flour,all purpose flour &salt. Make a fine batter.

· Heat oil in a deep bottomed pan.

· Dip the drumsticks into the batter.

· Deep fry over medium heat untill golden brown.

· Serve chicken drumstics hot with sliced onion and lemon.

Easy Chicken Recipes - Chicken Roll

INGREDIENTS:-

For the Filler:-
200 gm boneless chicken cut into small cubes.
1 tbsp ginger garlic paste
½ tsp chaat masala
½ tsp roasted cumin powder
½ tsp roasted coriander powder
½ tsp soya sauce
½ tsp vinegar
2 tbsp vegetable oil
Red chilli powder to taste
Salt to taste

For the Salad :
1 cucumber (finely chopped)
1 onion (sliced)
1 carrot (cut into thin strips)

For the Roti :
3 cups of all purpose flour
2 eggs
2 tbsp milk
2 tbsp oil
2 tsp salt

Method:-

For the chicken:
• Place the chicken cubes in a large mixing bowl.
• Add ginger garlic paste,red chilli powder ,chaat masala and salt. Mix well.
• Keep the chicken in refrigerator for about an hour.
• Heat oil in a pan. Add the chicken cubes.
• Fry for 5-10 min.
• Add roasted cumin powder,coriander powder,soya sauce and vinegar.
• Cook until the chicken is done. Keep aside.

For the Roti :
• In a large mixing bowl,mix the flour with eggs,milk,oil and salt.
• Mix them properly to form a dough. Add water if required.
• Add a coat of oil over the body of the dough. Cover with a cloth.
• Keep aside for 4 hours.
• Remove the cloth. Make small balls out of the dough.
• Take some flour and dip the balls.
• Keep the dipped ball in a flat surface. Roll out into round shape with a rolling pin. Roll as thin as possible.
• Heat little oil in a tawaa over medium heat.
• Place the rolled roti on the tawa. Fry untill you find the bubbles on the top.
• Drizzle little oil along the edges of the roti and turn over.
• Cook similarly on the other side…
• Remove it from the tawaa. Repeat the same method with the remaining roties.

Final step :
• In a bowl place chopped cucumber, onion,carrot. Mix well with mustard sauce, ketchup and a pinch of salt.
• Take a spoonfull of prepared chicken. Align them near the edge of the roti. Don't place in the middle.
• Over the chicken,add the salad mix and few drops of lime juice.
• Roll the roti tightly to cover the chicken.
• Wrap one end of the roll with a piece of paper.
• Chicken roll is ready.
• Serve hot and enjoy.

Easy Chicken Recipe - Veg Chicken

INGREDIENTS:-
500 gm chicken
½ cup yogurt
8-10 cashew nuts
2 tbsp poppy seeds
2 tbsp sugar
½ tsp garam masala powder
4-5 green chillies (chopped)
2-3 bay leaves.
¼ cup coriander leaves
Red chilli powder to taste
Salt to taste

Method:-
• Place the chicken pieces in a large mixing bowl.
• Make a smooth paste of yogurt,cashews,poppy seeds,green chillies and little salt together.
• Pour this mixture over the chicken. Add red chilli powder.sugar and salt. Mix well to coat all the chicken pieces.
• Keep the chicken in refrigerator for about 4-5 hrs.
• Heat oil in a pan. Add bay leaves. saute for few seconds.
• Add the chicken pieces. Cook for 10-15 min in a medium heat.
• Add little water. Cover with a lid. Bring to boil.
• Reduce heat. Cook untill the chicken is done. Stir occassionally.
• Sprinkle garam masala powder just before switching off the gas.
• Garnish with fresh coriander before serving.

Easy Chicken Recipe - Chicken Shami Kebab

INGREDIENTS:-
500 gm chicken mince
2/3 cups of bengal gram (chana daal )
1 onion (finely chopped)
2 onions (roughly chopped)
2 green chillies (chopped)
4 eggs
1-2 bay leaves
2 tbsp ginger garlic paste
1 tsp garam masala powder
½ tsp black pepper powder
Red chilli powder to taste
Salt to taste
Vegetable oil for frying

Method:-

· Soak chana dal for about one hour.

· Boil the minced chicken with soaked dal,roughly chopped onions,ginger-garlic paste,chilli powder and salt in a pressure cooker.

· Cook till the water evaporates.

· Allow the mixture to cool thoroughly.

· Grind the mixture to a fine paste.

· Heat oil in a pan. Add bay leaves. saute for few seconds.

· Add finely chopped onion. Fry till golden brown.

· Add the mince paste. Add green chillies.

· Fry for 2-3 min.

· Beat 2 eggs in a bowl. Pour over the mixture.

· Stir until the mixture becomes dry.

· Allow the the mixture to cool. Take out the bay leaves.

· Make small balls with the mixture. Shape into round flattened kababs.

· Take a small bowl. Beat 2 egg whites with little salt. Keep aside.

· Hit a pan in little oil over low flame.

· Dip the kababs in egg. Place on pan. Allow to cook till golden brown.

· Flip and cook other side. Add little oil if required.

· Drain in a paper towel.

· Serve hot shami kabab with salad n sauce.

Easy Chicken Recipe - Chicken Noodle Soup

INGREDIENTS:-
200 gm boneless chicken
1 onion (finely chopped)
¼ cup of grated carrot
¼ cup of grated cabbage
2 tsp butter
2 tsp soya sauce
1 tsp cornflour
1 tsp black pepper powder
½ tsp ginger (chopped)
½ tsp garlic (minced)
½ packet noodles
Salt to taste

Method:-
• Boil the cabbage and carrot in little water. Drain the water. Keep aside.
• Boil the chicken pieces adding 4 cups of water & little salt.
• Remove chicken pieces. Strain the stock.
• Bring the stock back to the gas top. Boil the noodles in the stock.
• Allow it to become cool. Strain the stock to separate noodles.
• Melt butter over medium heat.
• Add ginger & garlic. Saute for few seconds.
• Add onions. Fry for 1-2 min.
• Add soya sauce. Mix well.
• Add the stock follwed by the boiled noodles,cabbage & carrot.
• Bring to boil in medium heat.
• In a small bowl dissolve the cornflour in little amount of water.
• Pour into the stock. Cook for another 2-3 min.
• Sprinkle black pepper powder before serving.

Easy Chicken Recipe - Chicken Clear Soup

INGREDIENTS:-
200 gm chicken cut into small pieces
1 onion cut in quarters
2 egg whites (beaten)
8-10 black peppercorns
2 Cloves
½ inch stick Cinnamon
2 tbsp cornflour
¼ tsp lemon juice
¼ cup of parsley (finely chopped)
Salt to taste

Method:-
• In a large pan place the chicken pieces. Add onion,black pepercorns,cloves,cinnamon and little salt.
• Pour 4 cups of water. Bring to boil.
• Reduce heat. Cook for 30 min over low flame.
• Remove the chicken pieces. Strain the stock.
• Bring the stock back to boil in a low flame.
• Add lemon juice n Adjust salt.
• In a small bowl dissolve the cornflour in little water. Add to the soup. Stir.
• Let it simmer for 5-10 min.
• Increase the flame to medium. Slowly add the egg whites. Stir continuously.
• Serve the soup hot in a bowl. Garnish with fresh chopped parsley.

Easy Chicken Recipe - Chicken Stew


INGREDIENTS:-
½ kg chicken cut into small pieces
1 large onion (chopped)
2 large tomatoes (cut into 4 pieces)
1 potato (cut into 4 pieces)
1 carrot (diced)
8 whole black peppercorns
2 garlic cloves (minced)
1 cup yogurt (beaten)
1 cup milk
1 ½ tbsp butter
1 tsp black pepper powder
2-3 bay leaves
Salt to taste

Method:-
• Melt butter in a large pan over medium heat.
• Add bay leaves. Saute for few seconds.
• Add garlic,onion and carrot. Fry for 1-2 min.
• Pour a glass of water. Bring to boil.
• Add chicken pieces,potato,whole black peppercorns,tomatoes and salt.
• Reduce heat and cover with a lid. Cook untill the chicken is tender.
• Remove the lid. Add the yogurt. Stir for about a min.
• In a small cereal bowl mix the flour with milk.
• Pour this mixture to the chicken. Cook for another 1-2 min.
• Remove bay leaves n Sprinkle black pepper powder before serving.

Easy Chicken Recipe - Chicken Afghani

INGREDIENTS:-
1 kg chicken cut into small pieces
2 tbsp onion paste
2 tbsp ginger-garlic paste
4-5 tsp of cashew nuts+raisins paste
2 tsp green chilli paste
1 tsp lemon juice
1 tsp turmeric powder
1 tbsp milk
½ tsp saffron
2 cinnamon sticks
2 cardamom
2 cloves
50 gm yogurt
50 gm fresh cream
4 tbsp vegetable oil
Salt to taste


Method:-
• Immerse the saffron in 1 tbsp warm milk. Keep aside.
• Stroke over the chicken pieces with a knife so that the spices can get inside.
• Mix ginger-garlic paste,green chilli paste,lemon juice,yogurt and turmeric powder in a bowl.
• Pour the mixture in chicken pieces and mix well to coat all the pieces.
• Keep the chicken in regrigerator for about 3-4 hrs.
• Heat oil in a pan. Add cloves,cinnamon and cardamoms. Stir-fry for few seconds.
• Add the chicken pieces. Cook in medium heat for about 10 min.
• Pour 1 ½ cup of hot water to the chicken. Bring to boil.
• Reduce heat. Cook the chicken covering with a lid until it is done. Stir occassionally.
• When you find the chicken is done,add cashew+raisins paste and the cream. Mix well.
• Cook the chicken for another 5 min in a low flame.
• Remove the pan from the gas.
• Add the saffron (immersed in milk) to the chicken. Cover with a lid.

Easy Chicken Recipe - Chicken Cheese Kebab


INGREDIENTS:-
½ kg minced chicken
4 eggs
1cup milk
1cup all purpose flour
4 green chillies (chopped)
100gm grated cheese
40gm butter
1 tsp black pepper powder
2 cups of bread crumb
Salt to taste
Vegetable oil for frying.

Method:-
• Boil the minced chicken with little water. Add little salt while boiling. Let the water dry up completely.
• In a large mixing bowl place the boiled chicken. Add grated cheese and green chillies. Mix well.
• In a frying pan melt the butter in low heat. Add flour. Stir until all the flour is absorbed by the butter. Stir continuously.
• Add milk,salt & black pepper powder. Continue to stir. Stir until it becomes a thick mixture.
• Add that boiled chicken.
• Beat 2 eggs in a bowl n pour over the chicken.
• Stir until the mixture becomes dry.
• Allow the mixture to cool thorougly.
• Refrigerate the mixture for aboout 30min.
• Take out the mixture from refrigerator. Make small balls with the mixture. Flatten to the shape you desire.
• Dip in beaten eggs & roll over the breadcrumbs.
• Deep fry in oil.
• Serve chicken cheese kebabs with fresh salad.

Easy Chicken Recipe - Chicken Cutlet


INGREDIENTS:-
½ kg Minced chicken ( chicken keema)
2 tbsp paste of onion
1 tbsp Mustard sauce
4 slices of bread
½ tbsp chilli garlic sauce (or ½ tbsp red chilli powder)
½ tbsp soya sauce
2 tsp ginger-garlic paste
2 tsp black paper powder
1 tsp garam masala powder
½ tsp turmeric powder
¼ cup coriander leaves
2 green chillies (chopped)
2 cups of bread crumbs/biscuit crumbs
4 eggs (beaten)
Salt to taste
Vegetable oil for frying

Method:-
• Remove the sides of the bread slices. Dip in water and squeeze excess water.
• Mix the chicken mince with turmeric powder and salt.
• Boil using little water.Let the water dry up completely.
• Heat oil in a pan. Add the onion paste,ginger-garlic paste,garam masala powder,black paper powder,green chillies and coriander leaves. Fry for 1min.
• Add the minced chicken. Add all kind of sauces and mix well.
• Allow the mixture to cool thoroughly.
• Now mix the bread slice and minced chicken thoroughly.
• First make balls with this mixture. Then flatten to the shape you desire.
• Deep in beaten eggs & roll over the breadcrumbs.
• Deep fry in oil.
• Serve the cutlets with sauce n salad.

Easy Chicken Recipe - Shahi Chicken

INGREDIENTS:-
1kg chicken cut into small pieces.
4 onions (peeled & chopped)
2 tsp ginger-garlic paste
1 tbsp grated coconut
1 tbsp poppy seeds
1 tsp red chilli powder
2 tsp turmeric powder
1 tsp garam masala powder
3-4 green chillies
1 cup yogurt
½ cup tomato puree
½ cup fresh cream
4 tbsp cooking oil
Salt to taste

Method:-
• Mix the yogurt, garam masala powder,ginger-garlic paste & salt in a bowl.
• Pour the mixture over the chicken pieces and mix well.
• Keep this mixture in refrigerator for about 4hrs.
• Soak poppy seeds & grated coconut in half cup of hot water for 30 min.
• Make a smooth paste of poppy seeds and coconut. Keep aside.
• Heat oil in a pan. Fry the onions tiil golden brown.
• Add tomato puree,red chilli powder,turmeric powder and salt. Fry for 2-3 min.
• Add the chicken pieces into the spices. Saute for 5 min on a medium flame.
• Add water(as per desired curry thickness) and bring to boil covering with a lid.
• Reduce heat. Cook until the chicken is done. Stir ocassionally.
• Remove lid. Add the poppy seeds & coconut paste to the chicken. Add green chillies. Stir for another 1-2 min.
• Shahi Chicken is ready.
• Garninsh with fresh cream before serving.

Easy Chicken Recipe - Chicken Curry


INGREDIENTS:-
1kg chicken cut into small pieces.
2 onions (peeled & chopped)
1 large tomato (finely chopped)
2 tbsp ginger paste
2 tbsp garlic paste
1tbsp cumin powder
1tbsp coriander powder
1tsp black pepper powder
2tsp green chilli paste
1 tsp red chilli powder
2tsp turmeric powder
½ cup yogurt
2-3 bay leaves
1 tsp garam masala
½ cup mustard oil
Salt to taste

Method:-
• Roast the cumin powder and coriander powder together &keep aside.
• Place the chicken pieces in a large mixing bowl. Add half of the yogurt,green chilli paste,black pepper powder,salt and mustard oil to the chicken. Mix well.
• Keep this chicken in refrigerator for 2-3 hours.
• Heat up oil in a frying pan and add bay leaves.
• After 4-5 sec add chopped onions and fry till golden brown.
• Add the ginger garlic paste and fry for 2-3 min on medium heat.
• Now add the chopped tomatoes and cook until the the tomatoes form a smooth paste.
• In a small cereal bowl take the rest of the yogurt,previously roasted cumin n coriander powder,red chilli powder and mix well. Add little water if required.
• Add these spices in the frying pan and stir for another 2-3 min.
• Now add the chicken pieces. Add salt to taste. Cook in medium heat until most of the water evaporates.
• Now pour water as per your requirement to form the gravy. Bring to boil covering with a lid.
• Reduce heat and cook untill the chicken is done. Stir ocassionally.
• Sprinkle the garam masala powder just before switching off the burner.
• Serve with white rice.

Easy Chicken Recipe - Butter Chicken


INGREDIENTS:-

For Marination
1kg boneless chicken cut into small pieces
Lemon juice 1 tbsp
Butter 2 tbsp
Almond paste 2tbsp
Yogurt 1 cup
Red chilli powder 1 tsp
Ginger paste 1tsp
Garlic paste 1tsp
Garam masala powder 1tsp
Salt to taste


For Gravy
2 onions finely chopped
2 large tomatoes
Ginger paste 2tsp
Garlic paste 2tsp
Green chillies 3-4
Chicken stock ½ litre
Cooking oil 3tbsp
Butter 3tbsp
Cream ½ cup
Coriander leaves
Salt to taste

Method:-
• Stroke over the chicken pieces with a knife so that the spices can get inside.
• Add lemon juice,red chilli powder & salt to the chicken. Keep it for an hour.
• Wrap the yogurt with a muslin cloth and hang the wrap for about 15 min to drain the excess water.
• Mix the yogurt ,ginger garlic paste,butter,almond paste & garam masala powder in a bowl.
• Pour the mixture over the chicken pieces and mix well.
• Keep this chicken in refrigerator for marination upto 4 hours.
• Boil the tomatoes & remove skin. Now mash it till it becomes a smooth paste. Don’t use water.
• Heat the oil in a pan and fry the onions till golden brown.
• Add ginger garlic paste,green chillies & that mashed tomato. Add salt to taste. Fry for 2-3 min.
• Now add the chicken pieces and cook till sealed.
• Add the chicken stock. Bring to boil,reduce heat and cook till the chicken is done.
• Melt the butter in a separate pan and pour over the chicken.
• Garnish with fresh cream & coriander leaves.

Easy Chicken Recipe - Chicken Reshmi Kebab


INGREDIENTS :-
1 kg boneless chicken cut into 2" cubes
2 medium sized onions
2 eggs beaten
2 tbsp ginger paste
2 tbsp garlic paste
1½ tsp black pepper powder
1 ½ tsp red chilli powder
2 tsp garam masala
4 tsp paste of poppy seeds
4 tsp almond paste
2 tsp lemon juice
½ cup of fresh cream
½ cup coriander leaves
½ cup cooking oil
Salt to taste

Method :-
• Place the chicken pieces in a large mixing bowl.
• Make a smooth paste of all the ingredients except eggs.
• Pour the mixture over the chicken pieces & mix well to coat all the pieces.
• Gradually mix with beaten eggs. First add a bit and mix and then proceed to add at regular interval. Ensure that the mixture remains compact.
• Keep the marinated chicken in refrigerator for 4-5 hours.
• Put the chicken pieces on skewers.Lightly brush with oil to avoid sticking.
• Bake in the oven at 350 F for 12 mins-turning once halfway through cooking.
• Broil for 1 min at the end.
• Kebabs are ready. Serve hot with fresh salad.

Easy Chicken Recipe - Achari Chicken


INGREDIENTS :-
1 kg Chicken (cut into small pieces)
3 Tomatoes (finely chopped)
4 Onions (peeled & chopped)
6 Green Chillies
1 ½ tsp. Cumin Seeds (Jeera)
1 ½ tsp. Fennel Seeds (Sounf)
1 ½ tsp. Mustard Seeds (Rai)
1 ½ tsp. Nigella Seeds (Kalonji)
1 tbsp. Ginger Paste
1 tbsp. Garlic Paste
2 cups of Plain Yogurt
1/2 tsp. Turmeric Powder
2tbsp lemon juice
Coriander leaves (for decoration)
Red Chilli Powder (to taste)
4 tbsp. of Cooking Oil
Salt to taste

Method :-
• Heat up oil in a thick-bottomed pot to smoking point, cool and again heat up the oil and stir fry the onions till brown.
• Add in the chicken pieces, plain yogurt , ginger paste, garlic paste, salt, red chilli powder and turmeric powder. Mix and cover pot and let it cook on low heat until the chicken is half done.
• Seperately put a frying pan on stove on medium heat and roast the mustard seeds, cumin seeds, fennel seeds and nigella seeds in a dry pan.
• Take 2 teaspoons of this roasted mixture and set it aside. Grind the rest of it to a fine powder. Then add the turmeric powder to this grinded powder and make it into a thick paste by adding the lemon juice. Now stuff this paste into the green chillies and set them aside.
• Add the remaining paste to the chicken and sprinkle the roasted mixture over the chicken and further cook the chicken until it is well done. Then add the stuffed chillies to the chicken and cook on very low heat for another 5 minutes.
• Serve hot decorated with coriander leaves.

Easy Chicken Recipe - Chicken Kebab (Microwave)


INGREDIENTS:-
1 1/2 lbs. boneless chicken breasts
1 tbsp. dry sherry
1 tsp. light soy sauce
1 tbsp. salad oil
1 tsp. shredded fresh ginger

1 1/2 tbsp. creamy peanut butter
2 1/2 tbsp. salad oil
2 tbsp. soy sauce
2 tbsp. granulated sugar
2 tsp. white wine vinegar
1/2 tsp. sesame oil
1/4 to 1/2 tsp. ground cayenne pepper
1 tbsp. minced green onion

Method:-
• Cut chicken breast into 2-inch chunks and string on wooden skewers.
• Mix sherry, soy sauce, oil and ginger to make basting sauce.
• Prepare spicy sauce by combining the peanut butter, salad oil, soy sauce, sugar, vinegar, sesame oil, cayenne pepper and green onion.
• Place skewers on microsafe dish or roasting rack. Brush with sherry mixture on all sides. Microwave at high for 3 minutes.
• Turn skewers over and microwave at high for another 3 minutes or until done.
• Arrange chicken on serving dish. Drizzle with sauce. Garnish chicken kebab with fresh mushrooms and tomatoes, if desired.

Easy Chicken Recipe - Chicken Tandoori



INGREDIENTS :-
1 (3-pound) chicken, cut into serving pieces, skinned and trimmed of all visible fat
1/2 cup plain yogurt
2 tablespoons fresh lemon juice or malt vinegar
1 tablespoon minced garlic
1 tablespoon peeled and grated or crushed ginger root
1 tablespoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon fresh-ground black pepper
2 teaspoons salt, or to taste
Vegetable oil, for brushing
Fresh cilantro sprigs for garnish
Slices of cucumber, red (Spanish) onion, tomato and lemon, for garnish

Method :-

  • Stroke over the chicken pieces with a knife so that the spices can get inside.
  • In a bowl mix yogurt, lemon juice or vinegar, garlic, ginger, cumin, ground coriander, cayenne pepper, cardamom, cloves, black pepper and salt.
  • Pour the mixture over the chicken pieces. Mix well to coat all the pieces.
  • Cover and refrigerate for about 8 hours or overnight. (Do not marinate for longer than 2 days.)
  • Remove the chicken from the refrigerator at least 30 minutes before cooking.
  • The chicken may be grilled or roasted. If using a charcoal grill, prepare a fire for direct-heat cooking.
  • Position the grill rack 5 inches from the fire. Allow the coals to burn until white ash covers them and the heat is moderate.
  • Remove the chicken from the marinade, pressing lightly to extract excess marinade, and brush with oil.
  • Place the chicken pieces on a well-oiled grill rack and; grill, covered, with the vents open, turning 3 or 4 times, 45 minutes or until the juices run clear when a piece is pierced near the bone with a knife.
  • If roasting, preheat the oven to 450 degrees. Place the chicken on a rack in a roasting pan, brush with oil, and cook, turning once, 25 to 30 minutes until the juices run clear when a piece is pierced near the bone with a knife.
  • Serve tandoori chicken with sprigs of cilantro and slices of cucumber, red onion, tomato, and lemon.
