Easy Chicken Recipe - Chicken Biryani

INGREDIENTS:-
1 kg chicken
500 gm Basmati Rice
4 large potatoes (peeled & halved)
2 large onions
200 gm plain yogurt
2 tbsp ginger-garlic paste
1 tbsp whole garam masala
1 tsp garam masala powder
1 tsp red chilli powder
1 tsp shahi jeera
1 tsp kebab chini
1 tsp mace
1 tsp sugar
½ tsp saffron
4-5 whole black pepper corns
Kewra water few drops
Salt to taste
Vegetable oil/ghee

Method:-

Prepare the Chicken n Potatoes:
· Cut the chicken into medium sized pieces. Add vinegar and marinate for half an hour.
· Add, yogurt, ginger-garlic paste,red chilli powder,sugar, garam masala & salt to the chicken. Mix well. Keep aside for 5-6 hours.
· Peel and cut the potatoes into 2 pieces.
· Sprinkle little salt over the potatoes. Fry till golden brown.
· Heat 1 tsp ghee/oil in a large vessel. Add cinnamon, cardamom. Saute for few seconds.
· Add onions. Fry till golden brown.
· Add the chicken pieces. Reduce heat. Cook the chicken slowly.
· When the chicken is half done,add the potatoes and proceed to cook until the chicken is tender. Add little water if required.
· When the chicken is done add little kewra water. Keep aside.

Prepare the Rice:
· Wash the rice and let it dry completely.
· In a muslin cloth, add whole black pepper corns, shah jeera,kebab chini, mace (javitri), cloves, cinnamon, cardamom and tie a knot over them. Keep aside.
· Heat ghee/oil in a pan. Add cinnamon n saute for few seconds.
· Add the rice. Sprinkle little salt and fry for 2-3 min.
· Pour hot water (2cups of rice = 4 cups of water).
· Drop that muslin cloth into the water. Cook the rice covering with a lid.
· Don’t boil the rice completely. It should be half boiled.
· When the rice is done allow it to cool thoroughly.

Garnish:
· Cut 1 onion into long pieces. Deep fry until golden brown.

Final Step:
· Heat ghee/oil in a large bottomed pan over low flame.
· Add one third of the prepared rice and distribute it over the base of the pan.
· Add half of the prepared chicken & the potatoes over the rice, spread properly.
· Add another layer of rice and subsequently the final portion of the chicken.
· Finally cover the chicken with the rest of the rice. Add the fried onion, 1 tsp ghee ,1 pinch of saffron and 1 tsp of kewra water.
· Simmer for 15-20 min.
· Your chicken biryani is ready.
